Ingredients
- 1 can 15 oz whole corn
- 1 can 15 oz pinto beans
- 1 can 10 oz RoTel original
- 1 cup shredded cheddar cheese
Directions
- Open cans of corn, beans and RoTel and drain them
- Place corn, beans and Ro Tel in a sauce pan and cook over medium heat about 10 minutes or until warm
- Serve with cheddar cheese sprinkled on top

You can substitute black beans for pinto beans. I suggest however that you rinse and drain black beans out of the can. If you don’t rinse black beans they will make your corn look grey.
Mozzarella cheese works well instead of cheddar. You can also eliminate the cheese if you like.

Make sure you cook this recipe enough to eliminate the extra juice created by the Rotel in the cooking process.
