Melt in your mouth Snowball Cookies!!!
Ingredients
- 1 cup butter softened to begin Snowball Cookies
- 1 ½ cups powdered sugar
- 1 tsp vanilla
- 2 cups flour
- ¼ cup almond flour
- ¾ cup chopped walnuts
- ¼ tsp salt
Directions
- Heat oven to 325 degrees
- Mix butter and ½ cup of powdered sugar until creamy (a few minutes)
- Add vanilla and mix
- Add flour, walnuts, and salt and mix at a low setting. Continue until mixture forms a large ball in bowl
- Chill dough for about 20-30 minutes
- Roll into 1 inch balls and place on cookie sheets
- Bake until set but not brown. Approximately 8-10 minutes
- Cool for 5 minutes then roll in the 1 cup of powdered sugar while still warm
- Let cool completely before serving

Tips for Perfecting Snowball Cookies
This recipe is versatile and allows for changes depending on your taste
I prefer to use unsalted butter for this recipe. You can substitute oils like coconut oil for butter (use less) and remember that coconut oil will definitely change how the recipe handles
If you use salted butter you may want to eliminate the salt from the recipe
Walnuts are my favorite to use for this recipe however, you can substitute pecans or almonds if you prefer
Almond flour adds a little more density to the cookie. You can use only regular flour for this recipe just remember to add an extra ¼ cup of regular flour for a total of 2 ¼ cups of flour to the recipe
You do not need to chill the dough before making the cookies but they will be harder to handle when rolling the dough
If the dough is chilled you can cut the dough into sizes that are easier to roll into balls
You can substitute almond extract for vanilla extract if you want more of an almond flavor cookie
This recipe makes approximately 48 cookies. You might want to consider making 2 batches for a larger crowd
It is a good idea to use parchment paper on the cookie sheet. It makes clean up so much easier
This is a very easy recipe but remember the most time consuming part of this recipe is rolling the dough into balls and rolling the cookies in powdered sugar at the end

This Snowball Cookie recipe takes me back to my childhood when this cookie was a featured part of most holiday or special event cookie platters. Snowball Cookies were served at all the holiday parties and were always a big hit. Who can resist this yummy, messy, amazingly good cookie?
These Snowball Cookies sometimes are called Russian Tea Cakes or Mexican Wedding Cakes or cookies. I am sure there are other cultures that also have a similar type of special holiday cookie.
In this recipe only powdered sugar is used. It adds a bit of smoothness to the cookie dough and creates a super delightful texture. These cookies absolutely melt in your mouth.
