Ingredients
- 3 large tomatoes
- 1 bell pepper
- 2 stalks celery
- 4 oz of cheese cubed
- ¼ cup vinegar or lemon juice
- 1/3 cup olive oil
- 1 TBSP sugar
- ½ tsp garlic powder
- 1 TBSP Italian seasoning
- ½ tsp dried basil
Directions
- Cut up tomatoes, pepper, celery and cheese into bit size pieces and place into bowl
- Also add to the bowl, vinegar, olive oil, sugar, garlic, Italian seasoning and basil
- Stir all ingredients until well mixed
- Chill, stir again prior to serving

I prefer to use mozzarella cheese, but colby jack cheese and cheddar also work.
If you have fresh basil or cilantro, chop about 1 tablespoon and include it in the recipe, it makes it taste even fresher!
