How to make KC Brisket at home

Tender BBQ Brisket Kansas City Style 2022

This is a tasty Kansas City style brisket that is baked in the oven. Definitely worth the wait!

Ingredients

  • 5 lb or less trimmed brisket for BBQ Brisket
  • BBQ sauce for serving
  • ½ cup Italian salad dressing
  • 1 TBSP liquid smoke
  • 1 TBSP worcestershire sauce
  • ½ cup brown sugar
  • 1 tsp celery salt
  • 1 tsp salt
  • ½ tsp pepper
  • ¼ tsp chili powder
  • 1 tsp garlic powder

Directions

  1. Mix together marinade ingredients (salad dressing, liquid smoke, worcestershire sauce, sugar, celery salt, salt, pepper, chili powder, garlic powder)
  2. Wipe off meat with paper towel, then pierce both sides with a fork or knife
  3. Lay a piece of aluminum foil into a large baking pan large enough to folder over meat and cover it completely
  4. Pour some marinade into foil in pan.  Place the meat with on top of marinade.  Pour the rest of the marinade on top of the meat. Make sure that the fattiest side of meat is up
  5. Tightly fold foil over meat
  6. Refrigerate overnight if possible
  7. When ready to cook, preheat oven to 300 degrees
  8. Reduce heat to 275 degrees and place baking pan with meat into oven
  9. Roast approximately 5 hours
  10. You can open up the foil on the meat to check it by using a fork and seeing if it seems soft when poked.  Can continue roasting a little if needed
  11. Remove from oven and cool at least 15 minutes before slicing
  12. Serve with BBQ sauce of your choosing and enjoy!

Tips & Tricks for perfecting BBQ Brisket Kansas City Style

This recipe can be modified based on the ingredients you prefer, or just what you have in your pantry.  However I feel it is important to use the liquid smoke, it gives the meat a more BBQ flavor.  Liquid smoke is available in the grocery store near the bbq sauces or marinades.

The big trick to this recipe is roasting the meat for 5 hours in the oven.  It makes the meat very tender and delicious!  It is so easy put it all together and put it in the oven and just forget about it for 5 hours.

I often substitute organic sugar or sugar in the raw for brown sugar in this recipe.  It works out just as well!

This is best baked in a pan with sides, because it can leak out of the foil.  I prefer using heavy duty foil and  a 16×12 size pan, but you can substitute a 13×9 or similar type roasting pan.

Once the meat is tender and cooking complete remember to let it set for 15 minutes before you slice it.  It is really tempting to cut it early, but resist.

We like to serve this on a bun with pickles and BBQ sauce.  It is the ideal party or picnic food!
